Crumb Coated Ranch Chicken
2/3 c. ranch salad dressing
2 c. coarsely crushed cornflakes
1 Tbsp Italian seasoning
1 tsp. garlic powder
4 boneless skinless chicken breast halves
Directions
Pour salad dressing into a shallow bowl. In another shallow bowl, combine the cornflake crumbs, Italian seasoning and garlic powder. Dip chicken in dressing, then coat with crumb mixture. Place in a greased shallow baking pan. Bake at 400 degrees for 30-35 minutes or until juices run clear.
Notes: This recipe comes from the Prairie 4th Ward's Recipes & Remembrances 2nd Edition cook book which we recently received as a gift from my sister-in-law, Jill. It was contributed to the cook book by Jeana Haight. We didn't have any corn flakes, so we used corn Chex instead. I think corn flakes would have been better, but it was still tasty and quick to prepare.

Herb Roasted Chicken
Ingredients:3-4lb whole chicken
1 lemon
1 onion
2 garlic cloves
2-3 Tbsp. canola Oil
1 Tbsp. salt
1 tsp. pepper
2 tsp. dried sage, rosemary, and thyme (see notes)
Directions:
1. Rinse and dry chicken with a clean towel or paper towel. Be sure to remove the bag of gizzards. Preheat oven to 450 degrees. If you are using fresh herbs, remove stems and chop them up.
2. Add salt and pepper to herbs. To that mixture, add oil and stir to combine.
3. Chop lemon in half, give a rough chop to the onions (leave it in big chunks), and smash the garlic. Stuff them into the cavity of the chicken.
4. Rub the chicken with the herb and oil mixture, being sure to lightly cover all sides. Place chicken on a cookie sheet or in a shallow baking pan. Place in preheated oven for 1 hour to 1 hour and 15 minutes, until the chicken has a nice golden brown crust. Remove from oven and allow to sit for 10-15 minutes before serving. Enjoy!
Notes: I found this recipe on The Pioneer Woman. As explained on the website, fresh herbs would be best in this recipe, but I just had dried. If using fresh herbs, use about 1-2 tablespoons of chopped herbs. You can also stuff various things into your chicken, such as apples or carrots. Stuffing the chicken provides it with additional moisture, as well as adding extra flavor from the inside. This was actually my first time roasting a chicken. It was so simple, and so tasty! I used the leftovers in another recipe or two later that week. Whole chickens can be pretty cheap, so I suggest giving this a try and getting a few meals out of it!

Creamy Bean Soup
1 cup chopped onion (1 small)
4 cloves garlic
3 1/2 cups refried beans (two 1-pound cans)
1 3/4 cups thick & chunky salsa (16-ounce jar)
1 3/4 cups chicken broth (14 1/2-ounce can)
1 Tbs lime juice
2 tsp ground cumin
1/2 tsp crushed red pepper (optional)
Shredded cheddar cheese(optional)
Chopped fresh cilantro(optional)
Stroganoff
Beef top sirloin steak (or any cut of beef you want. Leftover roast beef works great!)
Onion soup mix OR onion, garlic, salt, and pepper
Flour
Beef or chicken bullion or broth
Sour cream or plain yogurt
Directions:
1. Place beef, a small amount of water, and seasonings in slow cooker. Cook until tender. I used 1 lb. of top sirloin steak and cooked it in our 1.5-quart slow cooker with about 1/2-3/4 c. water. My meat was frozen, so I set the slow cooker on high for about 2 hours, then turned it to low for about 3 hours. It would work to cook it on low all day, as well. I used 1/2 packet of onion soup mix, but you can also season it to your own liking.
2. When meat is done, remove from slow cooker and cut into small pieces. Set aside.
3. Skim about 1/4 cup of the fat from drippings (the oily liquid on top) and place in a saucepan. Add about 1/4 cup of flour and combine well. Add remaining drippings and any additional broth or water until you have the amount of sauce you want. If just adding water, be sure to add beef or chicken flavoring if needed. Cook and stir over medium heat until thickened. If the sauce needs to be thicker, combine more flour in a little bit of cold water, then add it to the sauce. Be sure to do a "taste test" and add any seasonings or flavoring if needed.
4. Turn heat to low. Add a small amount of sour cream or yogurt (maybe 1/4-1/2 cup, or however you like it). Yogurt is a healthier alternative and adds a nice little tang, but I used whatever I have on hand.
5. Add meat to sauce and serve over noodles or rice.

Southwestern Steak, Rice & Black Beans
2 lb boneless top sirloin steak, about 3/4-inch thick, trimmed
1/4 cup canola oil, divided
1 1/2 Tbs chili powder
2 tsp ground cumin
1 1/4 tsp salt, divided
2 medium lemons
1 (10-ounce) can diced tomatoes
1 (15-ounce) can black beans, rinsed and drained
6 cups hot cooked medium or long grain rice
1/4 cup chopped cilantro, optional
Directions:
1. Preheat grill or broiler. Rub both sides of steak with 2 tablespoons canola oil. Mix chili powder, cumin, and 1/2 teaspoon salt; rub onto steak.
2. Grill or broil steak 10 minutes for medium-rare, turning halfway through cooking, or to desired doneness.
3. Place steak on cutting board and let rest 5 minutes before thinly slicing across the grain; set aside.
4. Meanwhile, grate 1 tablespoon lemon zest and combine with juice from one and a half lemons and remaining 2 tablespoons canola oil in large bowl.
5. Add tomatoes, black beans and remaining 3/4 teaspoon salt and mix well. Add hot rice and toss to blend.
6. Place rice mixture on serving platter and top with beef slices. Garnish with cilantro and additional lemon wedges, if desired.
Notes: YUM!!! We got this recipe from Macey's recipe of the day. It was so delicious.
Chicken Cordon Bleu
4 chicken breasts
4 slices of ham (may need more or less depending on how thick they are)
4 slices Swiss cheese
1/4 c. flour
1 egg, beaten
1/2 c. Italian seasoned bread crumbs
4 Tbsp. butter
Directions:
1. Pound chicken breasts until they are 1/4 inch thick. This can be done easily by placing the chicken breast between plastic wrap and using a mallet to pound it.
2. Season both sides of chicken with salt and pepper to taste. Place 1 slice of cheese and 1 slice of ham on each chicken breast. Roll up each breast, using a toothpick to secure if needed.
3. Dredge in flour, shaking off any extra. Dredge in egg and then bread crumbs. Place in greased baking dish. Place about 1 tablespoon of butter on each chicken breast.
4. Bake at 350 degrees for about 35 minutes, or until juices run clear. Serve with a sauce made from chicken broth and cream, or cream of chicken soup and sour cream, seasoned to your taste.
Notes: Although it sounds fancy, this recipe is really simple and extra tasty! *The amounts can be adjusted depending on how many people you will be cooking for. I think I only did 2 chicken breasts, but doubled the recipe for this post.

Creamy Tomato Soup
3/4 cup extra virgin olive oil
Salt and freshly ground black pepper
1 stalk celery, diced
1 small carrot, diced
1 yellow onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 bay leaf
2 tablespoons butter
1/4 cup chopped fresh basil leaves (or dill)
1/2 cup heavy cream, optional
Preheat oven to 450 degrees F. Strain the chopped tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil, and roast until caramelized, about 15 minutes.
Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add celery, carrot, onion and garlic, cook until softened, about 15 minutes. (Times double for doubled recipe.)
Add the roasted tomatoes, reserved tomato juices, chicken broth, bay leaf, and butter. Simmer until vegetables are very tender, about 15-20 minutes. Add basil and cream, if using. Puree in your blender or with a hand held immersion blender until smooth.
Notes: This is the 100th recipe that we've posted on the blog! We got the recipe from one of my high school friends and his wife. It is definitely a step up from canned tomato soup, and we both thought it would be very tasty in a bread bowl.

Pineapple Glazed Chicken (or Pork Chops)
4 medium sized chicken breasts or pork chops (1/2 to 3/4 inch thick)
1/2 can pineapple rings, drained (reserve juice)
3/4 tbsp. dark brown sugar
2 tbsp. prepared mustard
1 tbsp. lemon juice
1 tbsp. Worcestershire sauce
1 tbsp. cornstarch dissolved in 1/8 cup cold water
enough water to bring reserved juice to 1/2 cup
Directions
Drain pineapple and reserve juice. Salt and pepper pork chops or chicken to taste.
In a small sauce pan combine pineapple juice, water, brown sugar and mustard and bring to a light boil. Reduce heat and stir in lemon juice, Worcestershire sauce and cornstarch mixture. Simmer for 3 minutes until thick, stirring constantly.
Brush sauce on pork chops or chicken breasts and place on a prepared grill. Brown pork chops/chicken for 2 minutes on each side, brush on more sauce and top with pineapple rings. Cook for two or three more minutes and turn so pineapple rings are on the grill surface and get the nice grill marks and cook for two or three more minutes. Flip once more, baste with sauce, and check pork chops or chicken. If done allow to rest for five minutes and serve.
Notes: Although these directions are for grilled chicken or pork, we still don't have a grill so we broiled the chicken instead. I thought it was quite tasty and it would probably be even better on the grill. Brittany used 2 large chicken breasts and sliced them in half so that they were thinner. She also used pineapple chunks because that is what we had. Brittany found the recipe, which she halved, at Cooks.com.

Philly Steak and Cheese
1 lb. beef sirloin, thinly sliced
3-4 mushrooms, sliced
1/2-1 green pepper, sliced
Buns*
Cream cheese
Directions:
1. In a fry pan on med-hi heat, cook meat, mushrooms, and peppers until meat is thoroughly cooked and vegetables are tender.
2. Spread cream cheese on bun. Add desired amount of beef onto bun. Enjoy!
Notes: This is a little different than the traditional Philly cheese and steak sandwich, since we used cream cheese and added mushrooms. This recipe was inspired by a sandwich I had at a restaurant once. I think it would be tasty with the buns toasted.
*To make homemade buns, follow this recipe. Instead of placing dough in bread pan, divide dough (for 1 loaf) into 6-8 balls. Place on greased baking sheet and bake until golden on top.
Cabbage Buns
1 lb. ground beef
1/2 head cabbage, chopped
1/2 onion, chopped
Salt and pepper
Bread dough, rolled out (enough for about 1 loaf)
Directions:
1. Brown ground beef, cabbage, and onion. Season with salt and pepper to taste.
2. Cut bread dough into about 4-inch squares. Place a spoonful or two of beef and cabbage mixture in center of dough square. Pinch corners together and seal edges, making sure that no beef mixture will seep out. Place on greased baking sheet seam side down.
3. Bake at 350 degrees until golden brown on top and bottom, about 10-15 minutes.
Notes: These are a little difficult to photograph, but they are really tasty! If making your own bread dough, you don't need to let it rise before rolling it out. See also: Russian Cabbage Pie
Tater Tot Casserole
1 c. frozen peas
1 lb. ground beef, browned and drained
1/2 c. shredded cheese
1 can cream of chicken soup
Tater tots
Directions:
Layer peas, ground beef, cheese, soup, and tator tots, in order given, in 9x13 casserole dish. Bake at 350 degrees for 20 minutes, or until heated through and the tater tots are golden brown. Serve with ketchup, if desired.
Notes: These amounts are approximate. I just kind of threw all these ingredients together. This is a recipe from John's mom. She just told us what she used to make it, but didn't give amounts.
Dijon Chicken
1 1/2 Tbsp. Dijon mustard
1 1/2 tsp. olive oil
1 clove garlic, minced
1/2 tsp. dried basil
1 c. breadcrumbs
2 chicken breast halves, boneless and skinless
Salt and pepper
Chopped fresh parsley (I used dried)
Directions:
1. Preheat oven to 450 degree. Lightly spray pan large enough to hold chicken breasts in.
2. Whisk together Dijon mustard, olive oil, garlic, and basil. Place breadcrumbs in a pie pan or on a large plate.
3. Season chicken with salt and pepper. Spread mustard mixture evenly over both sides of each chicken breast. Coat chicken completely with breadcrumbs.
4. Place chicken in baking pan. Bake about 10 minutes on one side. Turn over and bake another 5 minutes, or until chicken is cooked through. If chicken browns too quickly, cover with aluminum foil. Remove from oven and garnish with parsley.
Notes: I liked this recipe. However, I think it called for way too many breadcrumbs, and not quite enough mustard. I found the recipe here.
Oma's German Meatballs
2 lbs. ground beef
6 slices of bread, wet with water and squeeze out
1 onion, chopped
Salt and pepper to taste
1 Tbsp. lemon juice
2 eggs
2 cans evaporated milk
2-3 Tbsp. cornstarch
Water added to milk to make desired amount of gravy
2 Tbsp. sugar
2 Tbsp. vinegar
Directions:
1. Mix beef, onion, salt, pepper, lemon juice, and eggs. Form into meatballs. Brown meatballs in skillet (see notes) and drain fat, but leave any beef "crumbs" for flavoring the gravy.
2. Remove meatballs from pan. Make gravy by adding cornstarch to milk and water. Cook in skillet until thickened. Do not boil hard, or gravy will curdle! Add salt and pepper to taste. Add sugar and vinegar to gravy. Add in equal amounts if more is desired to flavor to your liking.
3. Add meatballs to gravy and serve over mashed potatoes.
Notes: This is my great-grandmother's authentic German recipe. The potatoes really complement these meatballs and gravy. I had a hard time getting the meatballs to hold their shape. I saw a meatball recipe that suggested chilling the meatballs for an hour before cooking them, so perhaps that would help them hold their shape. I made half of this recipe and we had enough to feed four, plus enough for 2 the next day. We had company the night I made this and they had to go back for seconds.
Split Pea and Ham Soup
1 lb. (or 2 cups) green split peas
6 c. water
1 lb. lean ham
1/4 tsp. pepper
1/2 tsp. onion powder
1/4 c. diced celery
Directions:
1. Rinse peas and sort out bad and foreign objects. Place peas in 4-quart saucepan with 6 cups water. Bring to boil and simmer 2 minutes with lid tilted. Remove from heat, cover, and let stand for 1 hour.
2. After 1 hour, dice ham and celery and add to peas. Add onion powder and pepper. Simmer over low heat for 1 hour, stirring occasionally.
Notes: A nice soup for a change. It was tasty with saltine crackers.
Beef Skillet Supper
8 oz. egg noodles
1 1/2 lbs. ground beef
1 medium onion, chopped
8 oz. tomato sauce
1/2 c. water
1 can corn, drained
1/2 tsp. salt
1/4 tsp. pepper
1 c. shredded cheese
Directions:
1. Cook noodles according to package directions.
2. Brown beef and onion. Drain.
3. Add tomato sauce and water; mix well. Cover and simmer for 8 minutes.
4. Add noodles, corn, salt, and pepper and sprinkle with cheese. Cover and cook until heated.
Notes: We got this recipe from John's mom. We used whole wheat noodles, which were tasty, and only used 1 pound of ground beef. We would have liked a little bit more of a tomato flavor, but it was a tasty meal.
Oriental Chicken Salad
Dressing:
1 c. canola oil
6 Tbsp. sugar
4 Tbsp. soy sauce
1/2 c. apple cider vinegar
1 1/2 tsp. ginger
3 dashes tabasco sauce
2 Tbsp. sesame seed
Salad:
3 cooked chicken breasts, shredded
2 small heads iceberg lettuce
4 green onions, chopped
2 stalks celery, cut diagonally
2 small cans mandarin oranges
1 pkg fried wonton strips
Directions:
Blend all dressing ingredients except for sesame seeds. (It works well to put them into a small jar with a tight lid and shake it up well.) Add sesame seeds. Mix all salad ingredients. Toss with dressing.
Notes: To make fried wonton strips--buy wonton skins in produce section. Cut squares into strips. In pan with enough oil to cover, cook on medium-high heat until strips are brown, then drain. This will only take a few seconds. We only did half of this recipe and it was enough for us to eat dinner, plus lunch the next day. We didn't use a whole package of wonton skins, so we have a lot in our freezer to use later. They were a fun addition to the salad. I found the recipe here.

Creamy Chicken Chowder
Water (plus chicken bullion, if desired for more flavor)
Diced potatoes
Chopped carrots
Sliced celery
Chopped onion
¼ tsp. black pepper
1 can cream chicken soup
Chicken breast, chopped
2 cups shredded cheddar cheese
¼ cup butter
⅓ cup flour
2 cups milk
Directions:
1. In a large pot, cook chicken and vegetables in enough water to cover ingredients. If desired, add more chicken bouillon to make flavor stronger. When done cooking you should have about 3 cups broth.
2. In separate pan, melt ¼ cup butter. Add ⅓ cup flour and mix.
3. Stir in 2 cups milk and stir until thickened over medium-high heat.
4. When just starting to boil remove from heat and add 2 cups shredded cheddar cheese until melted. Add the can of cream of chicken soup.
5. In the pot of broth and vegetables, add the cheese sauce and stir until well mixed. Soup is great with fresh bread and a garden salad.
Notes: This comes from Brittany's family cookbook. Very tasty!
Tinfoil Dinners

Directions
There aren't really any specific directions for these - you can pretty much make them however you would like. We sliced the vegetables and shaped the ground beef (which can be seasoned to your liking) into patties. We then wrapped a patty and veggies in 2 layers of aluminum foil, which was sprayed with cooking spray, and cooked them in the oven (400 degrees) until the vegetables were tender and the meat was done, which took about 50 minutes. Each dinner had its own aluminum foil wrapper.
Notes: These, of course, are also great when cooked in the hot coals of a campfire. Make sure tinfoil is wrapped tightly and any openings are on the top, as juices will leak out during cooking otherwise. I like to top mine with barbecue sauce.
