1 pkg (6 oz) Stove Top Cornbread Stuffing Mix
1 lb. lean ground beef, cooked & drained
1 can (15 oz) kidney beans, undrained
1 can (8 oz) tomato sauce
1 Tbsp chili powder
- Mix contents of Stuffing Mix pouch, 1 1/2 cups hot water and 1/4 cup margarine, cut-up, in large bowl just until moistened; set aside.
- Mix remaining ingredients in 12 x 8-inch baking dish. Top with stuffing.
- Bake at 375 degrees for 30 minutes or until thoroughly heated. Makes 4 to 6 servings.
Notes: Quick, easy, and tasty. I also like this recipe because I came up with something similar on my own while attempting variations on Chicken Stuffing Casserole during my college days.
