Ingredients
1/4 cup oil
1 egg
1/2 cup milk
1 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
Topping
1/2 cup brown sugar
1 Tbsp flour
1/2 cup nuts (chopped)
1 tsp cinnamon
1 Tbsp melted butter

- Mix together oil, egg, and milk. Set aside.
- Mix together flour, sugar, baking powder, and salt. Make well and add wet ingredients. Mix until moistened.
- Place in 8x8 pan; sprinkle topping on top. Bake at 375°F for 25 minutes.
Notes: I looked around at other coffee cakes recipes but a lot of them looked way too rich or sugary. This recipe is one Brittany has been making since we got married. (It is yummy.) It tends to dry out so is best eaten quickly.

8 months after posting this Brittany noticed I left off the baking powder and had the wrong amount on the salt. Fixed!
